TUNA BOTTARGA
Bottarga is a food preparation consisting of salted, pressed and dried fish eggs, then aged for a few months.
The best quality one, which stands out for its delicate flavor, is made from mullet or mullet eggs. The tuna bottarga has in fact a color that varies from light to dark pink, while that of mullet has an amber color. With a slightly bitter and distinctly salty flavor, mullet bottarga vaguely recalls the flavor of almonds: tuna bottarga, with its darker color and stronger flavor, is very popular on the market.
