Bottarga is a food preparation consisting of salted, pressed and dried fish eggs, then aged for a few months.

The best quality one, which stands out for its delicate flavor, is made from mullet or mullet eggs. The tuna bottarga has in fact a color that varies from light to dark pink, while that of mullet has an amber color. With its slightly bitter and distinctly salty flavor, mullet bottarga vaguely recalls the flavor of almonds: tuna bottarga, with its darker color and stronger flavor, is very popular on the market.
